This is what happens when you put chickpeas, kale, avocado, quinoa, beets, turmeric, and sweet potatoes into a bowl and drizzle a lemon tahini dressing over it. Know what else happens? It gets devoured! Buddha bowls, also called grain bowls, are typically made of nutrient-dense ingredients created as components in a bowl and eaten as a meal.
A Buddha bowl can also be called a hippie bowl, nourish bowl, or vegan bowl. I personally think of these as vegan or at vegetarian. You can add whatever you like, but for the sake of this Buddha bowl recipe, I'm keeping it vegan. The goal is to create a balanced selection of nutrient-dense ingredients with compatible flavors and textures that fill you up, and make you feel awesome!

Well there certainly are a lot of healthy and nutritious ingredients in that "hippie" bowl. I would love this for dinner any night of the week. Chickpeas are a great meat alternative Bowl meals. I love the term "hippie food" we used to judge the houses where we babysat as good or bad based on the amount of hippie food vs. Funny thing is, now MY house is full of hippie food and I love it! I also love meals in a big bowl.
